Kangaroo Island Marron with White Spring Truffle Butter
KANGAROO ISLAND MARRON WITH WHITE SPRING TRUFFLE BUTTER
INGREDIENTS:
Fresh Kangaroo Island marron, caught and euthanised humanely
Truffle Butter, we used Adelaide Hills white spring (bianchetto) truffle to make our butter
METHOD:
Prepare the marron by slicing in half lengthways.
Place meat-side down on a hot barbecue grill and cook for 10 seconds.
Turn the marron and place shell-side down on barbecue grill and top with small knobs of Truffle Butter.
Continue to cook until the butter melts completely, the marron meat just turns opaque and the shell turns red.
Remove from the grill and serve!
